When Walter Sirtori, a prominent butcher on the city’s Via Paoli Sarpi, announced he was closing up shop, people were horrified. Later, it was announced that a Chinese butcher, Agie Zhou, would be taking the reins instead—Sirtori had named him as his prodigy. “I wouldn’t have left it to anyone else,” Sirtori told Il Corriere della Sera. “Agie is like a son to me.” Zhou quickly proved to be as brilliant as his predecessor, while also bringing his own touch. A few months later, he opened a dumpling shop right next to the butcher, which he runs today alongside his aunts. Needless to say, the dumplings are sensational.
