Among the newest and most exciting entrants to Madrid’s dining scene is Los 33, in Las Salesas. Helmed by Sara Aznar and Nacho Ventosa, the restaurateurs behind Charrúa, the impossible-to-reserve Uruguayan steakhouse, and El Viajero, the relaxed rooftop bar, Los 33 is cozier than most hotspots, with a big fireplace and bookshelves lining the walls. The fare is homey, too: anchovies on brioche, beef chops, jamón, and Havarti sandwiches. No matter how hard securing the reservation will be—and it will nearly impossible—the meal will be worth the effort. —Jensen Davis
