I understand why those unacquainted with churros con chocolate might be surprised by the popularity of the delicacy. The combination of hot chocolate (we’ve all had it) with a churro (we’ve almost all had it) doesn’t exactly ring of innovation, let alone startling deliciousness. But have faith—I was once a skeptic, too. Spanish hot chocolate is strong and rich, but also comforting; it pairs incomparably well with a fresh and warming churro, in a way that is at once unexpected and mouthwatering. Chocolatería San Ginés is one of the best spots for the treat. The reputation of their hot chocolate has spread far beyond Madrid, and for good reason: it’s like none you’ve ever tried. Then, their churros perfectly balance crispiness and doughiness.
