Mercado de la Paz, opened in 1882 in Madrid’s Salamanca district, is the city’s longest-standing open-air market. It’s still a veritable destination for seafood and charcuterie (don’t miss the jamón ibérico cuts at the Álvarez Selección booth), but the best stall for a meal is Casa Dani, which won the national tortilla championship in 2019. Sitting at the wrap-around bar, you’ll find all kinds of delicacies—lentil soup, pork chops, croquetas, and even oxtail. But the tortilla is very much the star of the show. The potatoes are fried in sunflower oil, which means they retain their slightly acidic flavour. The onions are sweet, and the egg is perfectly runny.
