The director of bars for Delicious Hospitality Group and head bartender of PDT (Please Don’t Tell), an enter-through-the-phone-booth joint in a hidden room at the Crif Dogs shop on St. Marks Place, understands the merits of sloshing one’s way through the holiday season. His preferred means of doing so is the Kentucky Cardinal, a bourbon-centric classic named after the nightly train service that once connected Chicago to Kentucky.
